Paleo now, no longer low FODMAP AIP

In the last few months my diet has expanded quite a bit to where I no longer consider myself eating AIP (Autoimmune Protocol) but instead am eating a pretty full Paleo diet.   I added in eggs first about six months ago and have been slowly expanding with some nuts and seeds.  I’ve also stopped the low FODMAP portion of my diet and have added in many fairly high FODMAP foods.  This week I even went a little crazy and had a bunch of garlic and mushrooms with several meals with no real effects, I was kind of surprised.  I’m finally able to eat apples and stone fruit which are my favorites. I also ate a lot of raw food on my trip to the Deschutes with no issues so salads are back.  I eat a TON of sweet potato these days which are pretty hard to handle for most SIBO sufferers but I eat several a day now.

What does my typical day look like?

IMG_9318Breakfast –  My “standard” breakfast right now is sweet potato hash browns topped with a couple of fried eggs, a sausage patty, a banana and a coconut milk latte.   I do the hash browns and eggs in lard. Some days I’ll add in some sautéed chard or kale.  My other typical breakfast is a hash made with leftover squash, some chard, and maybe some other vegetables with bacon and/or sausage again topped  with a few eggs.   One day a week I’ll have pancakes made with coconut flour and I’m going to try plantain pancakes this week.

Snack – Yes, I snack now!  Usually mid-day when I’m out fishing or hiking I’ll eat a couple of Paleacado Cowboy Cookies and maybe an Epic Bar.

IMG_9316Lunch – This is usually leftovers or quick food. For quick food I do Paleo Wraps with salmon or tuna salad or burgers wrapped in lettuce.  Yes, I’m even eating tomatoes in small quantity again.  I pair this with some sauerkraut or kimchi most days and any leftover veggies I have.  I’ve recently discovered Jackson’s Honest chips, their sweet potato chips are nothing but sweet potato, coconut oil and sea salt and are fantastic.  I usually end lunch with a piece of chocolate, my new favorite being Pure7 100% bars.

IMG_9280Dinner – This is another big meal and always has a meat or fish entree along with a starchy vegetable (sweet potato and/or winter squash) and usually a green veggie.  This is too varied to really give a good example.  I usually finish dinner with some berries or fruit.   Here are a few grilled lamb chops with a  baked sweet potato stuffed with braised chard.

 

 

My supplement regime has changed a bit too as I’m trying to cut out anything I don’t especially need.

  • ALA – still doing it in hopes it will help my neuropathy
  • Butyrate – added this to try and see if I can get my Short Chain Fatty Acids (SCFA) and Butyrate levels back up
  • Probiotics – switched over to a probiotic with a pre-biotic potato starch in hopes this will also help feed the colon bacteria and build up my SCFA and Butyrate levels
  • Digestive Enzymes – doing these still but changed to a more potent one, we’ll see if it also helps with weight gain
  • Ginger – Still doing the ginger at night but have dropped the other ingredients from the MotilPro
  • LDN – probably on this one for life each night
  • Cortisol Manager – still doing one of these per night though now I’m sleeping pretty darn well

I’m down to my last half bottle of Iberogast and am going to try and do without once this is gone.  I’ve been only using it at breakfast and dinner for the last few weeks.

Still pretty free of SIBO symptom 5 months after the last time I actually treated this stuff.  I did drop some weight during my two weeks of living outdoors but given that I did 50 miles of hiking or fished for 10 hours a day I feel that 3.5 lbs wasn’t too bad.  I’m slowly working my way back up and am now less than 2 lbs below my high point of 158.
